Puy lentils, also known as green speckled lentils, are small, dark pulse seeds renowned for holding their shape and firm texture when cooked. Unlike red or yellow split lentils, these dark green speckled lentils retain a satisfying bite and do not break down into a puree, making them a favourite choice for structured dishes.
With a subtle, earthy flavour and light peppery notes, they work exceptionally well across a variety of classic and modern dishes. Common practical uses include:
- Warm Salads: Toss cooked lentils with goats' cheese, roasted beetroot, olive oil and fresh herbs.

Puy lentils require no pre-soaking before cooking. Simply rinse under cold running water, transfer to a pan of fresh water, and simmer gently for 20 to 25 minutes until tender yet firm. Add salt towards the end of cooking to keep the skins tender.
